Sunday Morning recipe

YOGURT RICE

V, VP, VK
Serves 2

Ingredients:
1 c Basmati rice
3 c water
1  tsp split Urad dhal, without the skins
1 tsp black mustard seeds
1 tsp sesame oil
1/2 tsp minced ginger
2 minced green chili peppers
2 tbs minced fresh cilantro
1 c fresh plain yogurt
1/4 tsp sea salt

Method:
Wash rice until water runs clear, drain.
Combine with the 3 cups of water and bring to a boil; simmer over medium heat for 25 min until well cooked.
Allow to cool.
In a preheated griddle, roast urad dhal and mustard seeds in oil until the dhal is light brown and the seeds begin to pop. Remove from grill. Set aside.
Sautee ginger and chili peppers in low heat for 4 minutes. Add cilantro during the last minute.
Pour yogurt into a large wooden bowl and mix in the dhal, seeds, herbs, and salt. Add to rice and combine well. Serve warm.

Ayurveda Recipe: Baked spiced Tofu

Good for V, VK, K, KV, KP
Serves 2

Ingredients: 
1 lb firm tofu
1/2 tsp curry powder
1/2 tsp tamari
1/2 tsp grated ginger
1/2 tsp minced garlic
1/2 cup of water

Method:
Cut tofu into 1/2 " slices. Mix spices with water and bring to a boil.
Remove from heat and marinate the tofu in the mixture for 30 min.
Preheat oven to 375 degrees F. Bake marinated tofu dry (about 35 min)
Allow to cool. Use on top of salads, soups, rice or in sanwiches.
